If you’ve not tried this delight yet Sha you’re missing oooo. Egusi stew is a type of stew prepared with egusi (almond nut), vegetable oil, fresh tomatoes, chopped onion, garlic, ginger, meat or fish etc.There is just something about Egusi stew that makes it irresistible for most people; maybe it’s the smell of the freshly prepared Egusi stew, or the appearance or the exotic taste….. Truly there is something.
Ingredients
2 Cups Melon Ground Egusi
1/2 Cup Water of
11/2 Cup Palm Oil you will end up using about 1/2 of a Cup
2 Tablespoons Crayfish
1 Cup Stock I used Chicken stock
2 Bouillon Cubes
Salt to taste
1 Pound Vegetables I used Spinach (Chopped)
1/2 Pound Smoked Fish shredded into chunky pieces
Crayfish, smoked fish etc
2 Medium Sized Onions
Beef Chicken, Fish etc
PREPARATION
First of all parboil your rice and set aside for your mouth watering stew then kick start with this guide.
1) Pour the Egusi Melon and one sliced Onion in a bowl. Upse your hand to mix the Onions with the Egusi. This will infuse some onion flavor into the Egusi and the Oil in the Egusi will also be activated.
2)Add water and set aside to settle.
3)Add the vegetable oil and allow to heat. Put your chopped onion and allow to heat
4) Add the blended fresh tomatoes then, fry till the water dries up.
5)Pour it inside the frying pot and continue frying for at least 5-6 mins. Add the garlic, ginger, seasoning cubes, the more you kitchenglory thyme and curry powder then, continue frying.
6)Remove from heat and drain the Oil (You don’t need all that Oil) and set aside
7)Add a little Palm Oil in another Pan (I used part of the Oil I drained from the Egusi) and add the second Onion (diced) and let that cook for a couple of seconds then add the Sauce and also allow that to cook for 5 minutes. – I used a precooked Sauce and I put the link to that above.
8)Add the Crayfish, Salt to taste, Stock cubes, Smoked Fish (you can add that later if you do’t want the Fish broken into pieces) and Stock.
9)Now add the fried Egusi to the sauce and allow it to cook for 20 minutes on a low to medium heat – check this constantly to avoid burning and add Water or stock if it’s getting too dry.
10)Stir, cover and allow to boil. Add in the stock water, salt to taste. Stir and top up water and seasoning if necessary. Cover and allow to boil. Bring it down and serve hot.
